How to avoid food poisoning

 
Food poisoning is an unpleasant and potentially dangerous experience. Keep safe and healthy by following these food preparation guidelines.

Keeping food safe

A wide range of foods can cause food poisoning if they are not handled correctly. These include:
  • raw poultry
  • raw eggs
  • meat
  • meat products
  • shellfish
  • sauces and desserts containing raw eggs (such as home-made ice-cream)
  • salads and vegetables that will be eaten raw.

Common errors

Some common errors that lead to food poisoning are:

  • poor storage
  • poor temperature control (cold foods not kept cold enough / hot foods not kept hot enough)
  • inadequate cooking
  • failure to separate raw and ready-to-eat food.
